Might sound strange to be trying to choose between these two, but we need advice! We've heard they're both highly intelligent, trainable, and like activity (may be an understatement for the border collie!)
My husband grew up in the suburbs with an indoor/outdoor border collie and has always been crazy about them. My family was in the country with an outdoor-only dog. We're both open to either a border collie or a standard poodle.
I am concerned about the border collie getting bored (we both work and have only a small yard) and possibly destructive. Do standard poodles have the same tendency?
I'm also really bothered by shedding (my husband's family's border collie drops hair like you wouldn't believe) but I don't mind grooming. We wouldn't give a poodle anything but a lamb cut.
We're going to exercise our dog but don't plan to do anything but the basic training - ie no shows or trials or whatever.
Also, we have a cat and want her to survive!
We want a smart, companionable, "stable" dog to love -- but we want to make sure they'll be happy with US!
What do you guys recommend??

Both breeds you mentioned are highly intelligent and need a lot of mental stimulation. Of the two the poodle is by far the more suitable for your situation. Its not fair to keep a collie if it isnt going to be worked properly, they get bored so easily and really arent too suitable for situations where no one is home all day.
Both breeds need a minimum two hours walking a day as both are extremely active and will become destructive and possibly aggressive if not exercised sufficiently. Both also need a lot of formal training throughout their entire lives or they will quickly start teaching themselves things you dont want them to learn - like how to open the fridge door!
Most puppies if brought up with a cat will be fine

I currently have a border collie mix and grew up with a miniature poodle. They are both highly intelligent, sweet loving companions. They do need lots of stimulation but I think the border collie needs it more. Poodles don't shed so that's a definate plus over the border collie. If you want to be entertained, the border collie is the way to go. He is amazing at agility and I plan to take many classes with him. Good luck and I know you will be happy with whatever breed you decide to get. [Big Grin]
