Maybe because it's too hard to handle them or their equipment isn't geared for it.

I have never heard of that before but I have also never owned a dog that big. If you are that curious why don't you ask them why they won't? I would be curious to know the answer

It might be because larger/heavier dogs cost more to tranqualize... or something like that. They might not have the funds to spend on dogs like that.

I know when I got my dog Koda neutered... I didn't do it until he was like 3 years old. At that time he weighed (if I remember right) 115lbs... I don't remember what the exact cost was, but I remember thinking it would have been so much cheaper to have him fixed when he was a pup.

Could it have anything to do with how Danes are prone to the twisted intestine thing? Maybe messing with their guts when they are older makes them more prone to that?
Just a wild guess.

Lots of variables. Who does the spaying? Is it a local vet practicing outside of the HS? Is the vet coming onsite to do the surgury? How old is the dog? Any idea of her medical history? If it is onsite, it could just be that the vet doesn't feel comfortable doing that kind of spay on that breed of dog without clinic resourses. If the dog goes to the clinic it could be that the price that was quoted is not eligible for a dog that large, Med histor could also have a large part of it.
